In our continued attempt in getting healthier and to cut back a bit on red meat, I have been subbing out ground turkey and chicken in place of ground beef in meatballs, meatloaf and burgers! Typically chicken burgers are bland and dry, not this one! I am so happy with the way these came out! I used lean ground chicken, roasted peppers, baby spinach and pesto! Topped with fresh mozzarella and in place of a big roll, I used a whole grain sandwich thin.... this is a HUGE winner!
