Cherry Pecan Baked Oatmeal

Ingredients:
- 3 cups rolled oats
- 3/4 cup dried cherries
- 1/2 cup toasted pecans, chopped
- 1 cup brown sugar
- 1/4 teaspoon nutmeg
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
Instructions:
- 1. Preheat oven to 350°F. Spray a 9”x13” baking dish with non-stick cooking spray.
- 2. In a large bowl, mix together the rolled oats, brown sugar, nutmeg, cinnamon, baking powder, and salt until well combined. Make sure you get out all the lumps.
- 3. Beat in the milk, eggs, melted butter, and vanilla extract. Stir in the dried cherries and toasted pecans. Spread into the baking dish and bake for 40 minutes.
