Paleo Vanilla Wafers

Gluten-free and cane sugar-free vanilla wafers. These bad boys are packed with protein and awesome flavor! Made with almond flour!

Ingredients:
- 2 egg yolks
- 1/4 cup olive oil
- 1 teaspoon vanilla extract
- 1/2 cup agave nectar
- 1/2 teaspoon salt
- 2 cups almond flour
- 1/2 teaspoon baking powder
Instructions:
- 1. In a bowl or mixer, combine the oil, egg and vanilla extract. Add the almond flour, baking powder, salt and agave. Mix until it comes together in a ball and does not stick to your fingers, but is moist.
- 2. Place the dough on a large piece of parchment paper and form a cylinder (about 1.5” in diameter). Wrap the dough cylinder tightly in the parchment paper and place in the freezer for half an hour or in the refrigerator for at least an hour.
- 3. Preheat your oven to 350 degrees. Remove the dough from the freezer/fridge and using a sharp knife, cut ¼” rounds and transfer to a cookie sheet. Bake for 12 minutes or until the tops are slightly golden.
