Vegan Black Rice, Baked Tofu and Avocado Bowl

This is a healthy vegan lunch that's quick and easy to throw together, especially if you have leftover rice on hand!

Ingredients:
- 1 1/2 cup(s) cooked black rice, or your rice of preference
- 1 small avocado, chopped
- 1 cup(s) brick savory baked tofu, about 3/4 cups, chopped
- Sesame Oil
- Soy sauce or Golden Mountain sauce (similar to soy sauce)
- 1 tsp. chia or sesame seeds
Instructions:
- 1. Add cooked rice, chopped avocado, and chopped tofu to a bowl. Season to taste with sesame oil and soy sauce and stir until combined
- 2. Garnish with chia or sesame seeds
