Alaska Halibut Caprese Salad Bites

These are great for lunch, dinner, or serve them as appetizers at your next get together.

Ingredients:
- 1 lb. halibut, skinless, cut into 1 1/4 in. pieces
- 1 - 3 ds. kosher salt, to taste
- 1 - 3 ds. black pepper (cracked), to taste
- 2 tsp. Italian seasoning
- 1 pkg(s) 12oz. arugula
- 1 pkg(s) fresh mozzarella cheese, cut 1/4 in. thick slices
- 1 whole tomato slices, 1/4 in. thick (slice on bias)
- 1 pkg(s) basil leaves, fresh
- 1/2 cup(s) olive oil
- 1 pkg(s) balsamic vinegar, to taste
- 1 - 3 ds. kosher salt, to taste
- 1 - 3 ds. black pepper (cracked), to taste
- 2 tbsp. basil, fresh (chiffonade cut)
- 1 whole french baguette, sliced 1/4 in. thick
Instructions:
- 1. Season Alaska Halibut pieces with salt, pepper and Italian seasoning. Place on a hot oiled grill or grill top.
- 2. Cook for 2 minutes, then carefully turn and cook for another 1 to 2 minutes, cooking just until fish is opaque throughout. Set aside.
- 3. Brush baguette slices with olive oil and toast each side.
- 4. Place toasted bread slices on a serving plate. Top with arugula, mozzarella slices, tomato slices, basil leaves, and cooked halibut pieces and skewer with wooden picks.
- 5. Drizzle with olive oil and balsamic vinegar to taste. Sprinkle with a pinch of salt and pepper. Garnish with basil chiffonade.
