Chimichurri Shrimp

Chimichurri Shrimp, serve as an appetizer or as a meal.

Ingredients:
- 1 lb. large raw shrimp, peeled and deveined
- 2 tsp. olive oil
- 1 - 2 ds. salt to taste
- 1 - 2 ds. pepper to taste
- Chimichurri Sauce
- 1 whole bunch cilantro
- 1 whole bunch of flat leaf parsley
- 2 whole juice of 2 limes
- 1/3 cup(s) olive oil
- 1/4 cup(s) onion, chopped
- 2 clove(s) garlic cloves
- 3/4 tsp. smoked paprika
- 1 tsp. salt
- 1/2 tsp. pepper
Instructions:
- 1. In a food processor, place herbs, lime juice, onion, garlic, salt, paprika and pepper. Pulse several times, then pour in the olive oil and blend until smooth. Pour into a small bowl and set aside.
- 2. Heat oil in a large skillet to medium high heat. Pat shrimp dry then season with salt and pepper. Place in a single layer in the skillet. Be careful not to over-crowd the shrimp; cook in double batches if necessary to avoid steaming them.
- 3. Sauté for 4-5 minutes, flipping once, until lightly golden on the outside and cooked through. Gently toss cooked shrimp with ½ cup of the chimichurri sauce.
