Avocado Hummus and Cucumber Pico Tostadas

These healthy Mexican inspired tostadas have an avocado hummus base and are topped with a cucumber pico. Great for appetizers, lunch or a weeknight meal.

Ingredients:
- for the avocado hummus
- 2 whole avocados
- 15 oz. chickpeas, drained and rinsed
- 2 clove(s) fresh garlic
- 2 tbsp. lime juice, fresh (approx 1 whole lime)
- 15 - 20 sprigs of cilantro
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1 - 2 ds. ground pepper
- 2 tbsp. olive oil

- 1/2 whole cucumber
- 1 whole tomato
- 1/4 whole red onion
- 1/2 whole fresh jalapeno
- 8 - 10 sprigs cilantro
- 1 tbsp. lime juice, fresh (approx 1/2 lime)
- 1/4 tsp. salt
