Chicken Satay with Curry Peanut Dipping Sauce

Who doesn't love to eat chicken from a stick? This recipe takes chicken skewers to another level. Beware, you will be licking the peanut dipping sauce clean even after you run out of chicken! Perfect for kids, entertaining or just an evening at home.

Ingredients:
- Chicken sate:
- 1 lb. chicken breast
- 2 tsp. ginger, minced
- 2 tsp. garlic, minced
- 1/2 cup(s) coconut milk
- 2 tsp. curry powder
- 2 tsp. tumeric
- 1 tsp. salt
- 1 pkg(s) skewers
- Dipping sauce
- 1 tbsp. sugar
- 1/2 cup(s) peanut butter
- 1 cup(s) coconut milk
- 1 tbsp. curry powder
- 1 tsp. salt
- 1 tbsp. hoisin sauce
- 1/2 tsp. fish sauce
- 1 - 2 whole lime, juice and limes for garnish
Instructions:
- 1. Thinly slice chicken breast into strips. Soak skewers in water.
- 2. In a bowl, whisk together ginger, garlic, coconut milk, curry, tumeric and salt. Pour over chicken and allow to marinade for 1 1/2 hours.
- 3. In a separate bowl whisk together all ingredients for dipping sauce until well mixed and smooth.
- 4. Skewer chicken and place over hot grill, about 2-3 minutes per side depending on thickness, turning once. Serve immediately with dipping sauce.
