Easy Crockpot Beef Stew

Ingredients:
- 2 lb. beef stew meat
- 1 whole yellow onion, finely chopped
- 2 clove(s) fresh garlic, minced
- 2 whole celery ribs, sliced
- 6 oz. tomato paste
- 32 oz. chicken broth
- 2 cup(s) fresh baby carrots
- 1 tbsp. dried parsley
- 1 tsp. oregano
- 1 cup(s) frozen corn, sweet
- 1 cup(s) frozen sweet peas
- 1/4 cup(s) flour
- 1/4 cup(s) water
Instructions:
- 1. Combine beef, celery, carrots, onion, garlic, parsley, oregano, chicken broth, and tomato paste in the crock pot. Cook on LOW for 10 hours or on HIGH for 6-7 hours.
- 2. About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.
