Greek Cucumber Tomato Salad
With just a few fresh ingredients, this healthy salad is a perfectly bright accompaniment for any protein or great on its own.

- 1 lb. cherry tomatoes, halved
- 1 whole english cucumber
- 8 oz. feta cheese
- 4 oz. kalamata olives
- 4 tbsp. olive oil
- 1 whole lemon, juiced
- 1. Peel some of the cucumber skin, remove seeds and dice and place in a medium size bowl.
- 2. Add tomatoes, feta and olives. Squeeze lemon juice and drizzle olive oil.
- 3. Allow to marinate in the refrigerator for 10 minutes before serving for best flavor.
