Baked Potato Smothered in Homemade Bean Chili

You’ve just arrived home from work, you’re too exhausted to cook… what do you do? Whip this quick Baked Potato Smothered in Homemade Bean Chili recipe and pour yourself a glass of wine! It takes 30 minutes, but only about 10 minutes hands on.
This recipe contains potatoes (russet), olive oil, onions (yellow), peppers (jalapeno, fresh), beans (black), beans (pinto), tomato paste, garlic powder, cumin, chili powder, oregano (dried), salt, black pepper, XXXXXXXXXXXXXXXXXXXX, salsa, greek yogurt, peppers (jalapeno, pickled), hot sauce, cilantro (fresh)

Ingredients:
- 4 whole russet potatoes
- 1 tsp. olive oil
- 1/2 whole yellow onion, chopped
- 1 whole fresh jalapeño, chopped
- 1 can(s) 15oz. reduced sodium black beans
- 1 can(s) 15oz. reduced sodium pinto beans drained
- 1 tbsp. tomato paste
- 2 tsp. garlic powder
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. dried oregano
- 1 - 3 ds. salt to taste
- 1 - 3 ds. pepper to taste
- LOW CALORIE TOPPINGS (OPTIONAL)
- 1 pkg(s) 16oz. salsa
- 1 pkg(s) 24oz. greek yogurt
- 1 pkg(s) 12oz. fresh or pickled jalapeños
- 1 pkg(s) 5oz. hot sauce
- bunch fresh cilantro
Instructions:
- 1. Here is how I make this in under 30 minutes:
Wash and pierce potatoes with fork, toss in microwave for 10 minutes and turn the oven up to 425
- 2. While the potatoes are in the microwave chop the onion and jalapeno. Then heat oil in a large skillet on medium high and add the onions cook for 5 minutes. Then add the jalapeno, cook for another 5 minutes and add black beans w/ the sauce they come in, the drained pinto beans, tomato paste, garlic powder, cumin, chili powder and oregano. Reduce heat to medium low. At some point the potatoes will be done in the microwave and you can place them in the oven, right on the rack.
- 3. All right, that’s all the work! Pour yourself a glass of wine and relax for the next 20 minutes while the miracle of your oven and range do the rest of the work for you. Once or twice stir and smash the beans a little. When the 20 minutes is up remove the potatoes from the oven, slice down the middle and mound on some steaming hot chili and some yummy toppings.
