Honey Balsamic Tuna Veggie Bowl

These tuna bowls are simple! Made with canned tuna, green beans, carrots, and a honey balsamic sauce and served on top of your choice of brown rice or quinoa.

Ingredients:
- 5 oz. can white albacore tuna
- 1 tbsp. olive oil
- 1 whole large shallot, chopped
- 1 whole large carrot, peeled and sliced
- 1/4 lb. fresh green beans, trimmed and halved (8 total)
- 1 whole red bell pepper, chopped
- 1/4 cup(s) cashews, roasted and salted (more to taste)
- 2 1/2 cup(s) uncooked brown rice or quinoa for serving

- 1 tbsp. honey
- 1 tsp. dijon mustard
